First things first, the unboxing. From the moment we cracked open the Roccbox’s package, it was clear that this was a well-thought-out product. The packaging alone had us feeling like we’d just unwrapped the iPhone of pizza ovens. Everything was neatly stowed and protected, laying out the pieces like an eager friend ready to dazzle us with its performance.

The Roccbox comes with several things you’d get with ovens that cost twice as much: a built-in thermometer, a detachable burner, and a professional-grade pizza peel. Setting up the Roccbox was nearly idiot-proof, which was a relief considering our past traumas with overly complicated gadgets. The assembly mostly involves screwing in the legs and attaching the gas burner. The only real drawback was the weight; it’s not the lightest pizza oven on the market. Coming in at around 40+ lbs., completely assembled, it’s not as “mobile friendly” as the Onni. But, once it’s set up, you’re good to go.

A nice little bonus; the Roccbox is modular. If the gas burner decides to go kaput in a few years, you can simply replace it without forking out for an entirely new oven.

Cooking Performance

Now on to the main course—performance. Like all the pizza ovens under $1000, they boast insane max heat and heat times that never seem to live up to real-world use. The Roccbox advertises max temperature of 950°F in 20 minutes. But we didn’t see this to be true. Using our IR thermometer from Thermoworks, we reached a maximum temperature of 859°F after about 40 minutes. While it’s not 950°F in 20 minutes, it’s impressive for unit under $500 (FYI; at the time of this writeup it’s on on sale for $399).

Cooking with the Gozney Roccbox turned out to be an exercise in precision. The built-in thermometer was off by about 20%/+°F throughout when compared to RF surface thermometer. Compared to the Ooni Koda, the Roccbox excelled in maintaining consistent heat across the cooking surface. This is absolutely crucial for achieving that coveted leoparding on the crust—those little pockets of char that add both flavor and texture.

Our pizzas emerged from the Roccbox with perfectly crispy crusts and gooey, melted cheese topped with a medley of our favorite ingredients. The radiant, even heat ensures that there are no half-baked disaster zones on your pies.

The most commonly noted drawback is its bulk. Compared to the compact Ooni Karu or Koda, the Roccbox is a beefy apparatus. But hey, it’s hard to maintain high temps when you’re cooking in an aluminum can. If you need a tiny and light pizza oven, you may want the Ooni.

While we primarily put the Roccbox through its paces with pizza, we found it to be a remarkably versatile appliance.
